Serves 4

Ingredients

  • 1 unwaxed lemon, rind and juiced.
  •  150g sliced white cabbage
  • 150g red cabbage
  • 4 Tbsp mayonaise
  • 4 onion & leek sausages
  • 4 brioche buns

Method

Start by making the coleslaw. Using a mandolin or a knife, cut up thin slices of white & red cabbage into a large bowl. Add in the lemon rind, juice, mayonnaise and season with salt and pepper. Stir until everything is combined. Grill the sausages for about 10 minutes or until cooked thoroughly. Meanwhile, cut the rolls open and spoon the coleslaw into each bun. When the sausages are cooked place them on top of the coleslaw.
Serve immediately
