CRUSHED POTATOES WITH BROCCOLI & ALMONDS

Serves 4

Ingredients

  • 25 g sliced almonds
  • 8 Guinness & leek sausages
  • 2 tbsp olive oil
  • 900 g peeled potatoes
  • 25 g chives
  • 600g broccoli Method

Method

Heat a dry frying pan toast the almonds over medium heat for 2 minutes. Leave to cool on a plate. Heat the oil in a frying pan and fry the sausages for about 8 mins or until cooked thoroughly. Meanwhile, boil your potatoes until cooked through and then with a potato masher, mash the potatoes a couple of times so as to crush them as opposed to pureeing. Cut the chives into small pieces and stir through the potatoes. Divide the broccoli into florets and boil for 4 minutes. Assemble on your plate with the sausages, potato and broccoli and sprinkle with the toasted almonds.
Serve immediately
